Only All-American Pressure Cookers/Canner feature an exclusive, precision machined "metal-to-metal" sealing system. Positive action clamping locks align the cover to the base, forming a steam-tight seal. At the same time, this metal-to-metal seal automatically permits venting under unusual pressure conditions, providing an extra margin of safety over conventional rubber or composition gasket cookers.

The All-American Pressure Cooker/Canner is, first and foremost, a canner. It is large and heavy-cast for processing larger quantities of food per load. The USDA recommends pressure canning as the only safe way to can meat, fish, poultry and vegetables. "Pressure cookers" are not recommended for canning because a fully loaded canner takes a longer time for heating and cooling. This time is taken into account when determining processing times in standard canning timetables.

    • HI AGAIN. I WANT TO KNOW THE PRICE THAT I GET FOR BUYING 4 COOKERS. ANOTHER THING, I PLAN TO USE THESE COOKERS FOR COOKING LARGE QUANTITIES OF BEANS IN LESS TIME THAN A ORDINARY POT. CAN YOU GIVE ME AN APROX. OF HOW MUCH TIME IT TAKES TO COOK A FULL LOAD? IS THERE ANY PROBLEM OR RESTRICTION IF I USE THEM AS A COOKER AND NOT AS A CANNER?

    • Beans vary considerably on how long they take to cook, depending on their age and their size.A general rule of thumb is one pound of navy or kidney beans per one quart of water. Start with 40 minutes at 15 pounds pressure. and adjust time according to tenderness (doneness).

      Beanswill cook faster if they are soaked overnight.

      When first using the cooker/canner, you should do a test batch using a smaller amount of beans. When cooking beans, some foam develops on the surface. When cleaning the canner after use, inspect the pet cock to be sure that it is not clogged. This will ensure the pet cock is clearfor future pressure cooking.

      If you are just boiling the beans and not pressure cooking them, then you can use the canner like a regular pot.
