The kit comes with everything you need (except the milk!) to make fresh cheese in your kitchen:

• 3 recipe booklets
• 2 yards of butter muslin/cheesecloth
• 1 food thermometer
• 5 vegetable rennet tablets
• 4 cheese moulds (in a variety of shapes)
• Citric Acid
• Cheese Salt

This kit includes enough of the above ingredients for 30 batches of cheese. Rennet is an enzyme that promotes hardening of cheese. There are 5 rennet tablets included in the kit for recipes for harder cheeses. The remaining 25 recipes are for soft cheese and do not require rennet. The kit will stay fresh on the shelf for 6 months to one year and you can extend the life by storing the vegetable rennet tablets in the freezer for up to 3 years.
